Snow Day in Austin

Snow has come to Austin! When I checked the weather the other day and saw snow on the report for this weekend, I thought it might be a light dusting, but we have had actual snowfall all day. It is beautiful and we have had the best day as a family playing in it (Charlie for the first time ever!)

Growing up in Utah, I loved skiing, but a whole winter of snow and cold temperatures was never really my thing. Now that I know I’ll be back in 65 degree temperatures by Thursday, one day of snow actually seems pretty nice. To stay warm, I broke out all of my winter clothes that I normally pack for trips to Montana and Utah, and my husband has been cooking his bolognese all day.

One thing I’ve learned about surviving cold weather is that it’s more important to be warm than cute… something I wish I would have grasped in middle school. A few years ago I finally broke down and bought the Sorel boots with rubber soles and fur tops. I always thought they were the most atrocious boots, but they have saved my life and mood in the cold! I used to try to wear my Ugg boots everywhere, but once they are wet, you get SO cold!! These boots may not be the cutest, but they keep you warm and dry all day. Underneath my boots, I always wear Smartwool socks, they are the best and wool is a great insulator.

No matter the season, you’ll find me in my Lululemon Align leggings. They work for a yoga class in the summer and for skiing in winter, and especially well for lounging around the house all day. I’m so sad that my Burberry jacket isn’t made anymore because it is one of my all time favorite pieces. It works for several climates because of the liner that is easily removable and it is water-resistant with a stylish hood.

To accessorize my winter look, I threw on my favorite Zara scarf, fluffy hat, Gucci dupe sunglasses and cozy cashmere gloves. I will say that cashmere gloves are not the most practical option in the snow and they are dry clean only, but they are SO soft and feel like blankets on my hands so I love wearing them.

Of course on a day like this, you have to cook something that will warm your soul so my husband made his bolognese. Several years ago when we were in Napa after hitting a few vineyards on a freezing day, we had lunch in Yountville at Bottega and we had the best bolognese we’ve ever had. After that lunch, Will studied the bolognese and the ingredients they used and obsessively watched Frank Prisinzano cooking videos to create the perfect bolognese.

Will says that contrary to public opinion, bolognese is a meat-based sauce, not a tomato-based sauce. Much like Frankie P, Will does not consider this a recipe, but rather a method so it’s not like the other step-by-step recipes I’ve shared with you all before.

Will’s Bolognese Method

Ingredients:

¼ lb. Pork

¼ lb. Ground Beef

¼ lb. Lamb

4 Carrots

4 Stalks of Celery

1 Yellow Onion

A few pinches of salt

Pepper to taste

Olive Oil

Whole Milk

White Wine 

Chicken Broth

1 can Tomato Paste

1 Bay Leaf

Parmesan Cheese

To Make: 

  • Heat olive oil in a deep pan and add salt and pepper. Add all three meats to the olive oil and sauté until brown. 
  • Roughly chop vegetables and add them to a food processor. Pulse until blended. Add vegetable mixture to the browned beef.
  • Add white wine to the beef and vegetables and cook until there is no moisture. 
  • Add tomato paste and combine.
  • Add milk and broth to the mixture and turn heat to low. 
  • Add bay leaf and let mixture simmer for at least 30 minutes but could be several hours if you want.
  • Serve over pasta of your choice and top with freshly grated parmesan.
  • Enjoy!!

Brit’s Summer Travel Series: Park City, Utah

As Summer comes to a close, so too does Brit’s Summer Travel Series. And the last stop on my journey is one of my favorite places in the world, Park City, Utah. Because I grew up in Salt Lake City, Park City is like a second home to me.

Just 35 minutes from the Salt Lake City airport, Park City is a top destination anytime of the year. Although the town is famous for its skiing, the summer months are just as fabulous. From hiking to river rafting, shopping and eating, there are endless activities to do in Park City that work for people of all ages.

Since I’ve lived in Utah, Park City has changed so much. Many of the restaurants and shops are now different and even the ski resorts have had a major shakeup, but it is still charming as ever and now much fancier, which I love. For my most recent visit, we chose to stay at the Waldorf Astoria Park City and absolutely loved it.

The Waldorf was not only a beautiful hotel with huge, updated rooms, but the staff was also incredible. Everyone remembered us and they were so sweet to our puppy, Charlie. Little things like s’mores by the fire at night and the DJ at the pool on Saturday made our long-weekend stay so much fun. We booked our room through Chase Luxury Hotel & Resort Collection so our room was automatically upgraded and we had free breakfast every morning which was amazing. I loved the food at the hotel, thought the wine list was ok and the cocktails were great.

The Waldorf is four miles from Main St. so if you’re looking to be right on Main St., the Marriott Summit Watch is a fabulous choice and affordable. If you’re interested in staying in Deer Valley, the Montage, St. Regis and Stein Eriksen are my top choices.

If you’re a foodie like me, then you will love Park City! I have to start with 501, it was by far our favorite restaurant of the trip and a total surprise. We actually went in because we wanted to have lunch on their balcony. The restaurant is situated right on Main St. and has wonderful views. We LOVED the food and they had an excellent wine list. I had the Ahi Tuna appetizer two days in a row and would have done it for a third if I could. The service was excellent and we couldn’t have asked for better lunches.

We thoroughly enjoyed our dinner at Riverhorse and I would say this is a must-try if you’re in town. I made our reservation about a month in advance and the restaurant was full so definitely make a reservation for this one if you can. The service was also impeccable here and the food and wine list were top-notch.

If you’re staying in the Canyons like we did, Powder, the restaurant at the Waldorf, Versante and Cortona are excellent choices and are close by. If you’re looking to stay on Main St., Riverhorse, 501, Yuki Yama, and Tupelo will be perfect for you.

As far as breakfast spots and coffee shops go, I love the Java Cow Bakery. When I was growing up, we would always go here for ice cream (usually after dinner at the Pizza Noodle) and I just lived for it!! But they now have wonderful coffee and breakfast options so I highly recommend checking it out. Riverhorse Provisions, is also a great option for breakfast.

One of my family’s favorite places to go for a celebratory brunch when I was little was the Stein Eriksen so of course we had to go this past weekend. But things have changed. Because of COVID-19, they no longer do brunch as a buffet, but rather family-style and it was not good. The service was great here and the views can’t be beat, but the food did not do it for me. I would suggest going for lunch, dinner or maybe a drink to see Deer Valley, but I would pass on brunch for sure.

The activities in Park City are literally endless! On our long-weekend, we barely had time to scratch the surface. Of course, checking out Main Street should be on your list. Historic Main Street is filled with art galleries and unique shops where you are sure to find something you’ll want to take home with you. We stumbled upon Baranof Jewelers and I found a few gems I will definitely be returning for.

If you’re looking for souvenirs to take home to your loved ones, Park City Mercantile has fabulous leather coasters, cutting boards and more. I also love the Deer Valley Signature Store on Main Street for Deer Valley Merchandise like t-shirts, hats and odds and ends. If merchandise isn’t quite the way you want to remember your time in the mountains, an iconic piece from the McMillen Fine Art Gallery might be more up your alley. Jared and Tish McMillen have captured some of the most stunning scenes from the Rocky Mountains and any of their pieces would be the perfect addition to your home.

Growing up, we would always bike around McPolin Farm. Not only is there a great trail, but because of the iconic white barn with an American Flag, its makes a wonderful spot for family photos and is a landmark in Park City that is not to be missed. Don’t be fooled by the fence around it, McPolin Farm is owned by the people of Park City and is completely open to the public.

The Defined Dish Black Pepper Chicken

The Defined Dish Black Pepper Chicken

Tonight I am making The Defined Dish Black Pepper Chicken for dinner. This light, asian-inspired dish is a perfect dinner to get your week off to a healthy start.

Black Pepper Chicken recipe excerpted from The Defined Dish: Healthy and Wholesome Weeknight Recipes © 2019 by Alex Snodgrass.

INGREDIENTS:

BLACK PEPPER SAUCE

¼ cup chicken broth

¼ cup coconut aminos

1 tablespoon rice vinegar

1 teaspoon fish sauce (Red Boat)

1 teaspoon freshly cracked black pepper (see note)

¼ teaspoon ground ginger

CHICKEN

2 pounds boneless, skinless chicken breasts

¼ cup plus 2 teaspoons avocado oil

1 teaspoon kosher salt

½ teaspoon freshly ground black pepper, plus more for serving

2 tablespoons arrowroot starch

4 celery stalks, ends trimmed and cut diagonally into 1-inch pieces

1 medium white onion, halved and thinly sliced (2 cups)

3 garlic cloves, very thinly sliced

DIRECTIONS:

MAKE THE BLACK PEPPER SAUCE: In a small bowl, whisk together the broth, coconut aminos, vinegar, fish sauce, black pepper and ground ginger. Set aside until ready to use.

MAKE THE CHICKEN: Place the chicken breasts on a cutting board and cover with parchment paper. Use a meat mallet or the bottom of a skillet to pound the chicken until it is an even ¼ inch thick. Discard the parchment, then cut the chicken into 1-inch cubes.

Place the cubed chicken in a medium bowl with 2 teaspoons of the avocado oil, salt and pepper. Toss to evenly coat, then add the arrowroot and toss again.

In a large nonstick skillet over medium-high heat, heat the remaining ¼ cup avocado oil. When the oil is very hot but not smoking, add the chicken to the skillet in a single layer (you may need to do this in two batches). Cook the chicken until golden brown and cooked through, about 4 minutes per side. Transfer the chicken to a plate and set aside.

Add the celery and onion to the same skillet and cook over medium-high heat, stirring occasionally, until the vegetables are slightly tender, about 4 minutes. Add the garlic and cook until fragrant, being careful not to burn, about 1 minute.

Return the chicken to the skillet with the sauce and bring to a boil. Reduce to a simmer and cook until the sauce is thick and coats the chicken and vegetables, about 5 minutes.

Remove the pan from the heat and season with salt to taste. Serve as is or with cauliflower rice, and top with a sprinkle of pepper.

NOTE: Regular old ground black pepper just doesn’t work in this dish! It’s essential that you use freshly cracked black pepper.

In the cookbook, Alex suggests serving the black pepper chicken over cauliflower rice, but my husband loves white rice so I served mine tonight with Lundberg Farms Jasmine rice. If you want a little more spice, peppers would be a great addition to this dish, but it is really delicious the way it is.
